2007 AAMP CURED MEAT HALL OF FAME

Dan Weber of Weber Meats, Geneseo, Illinois, was inducted into the Cured
Meats Hall of Fame on Saturday, July 14, 2007 at the Association of Meat Processors (AAMP) Convention in
Milwaukee, WI. Dan was awarded this prestigious honor based on his
dedication to producing high quality cured and smoked meat products. Dan
comes from a long line of meat cutters and sausage makers and has continued
their traditions in his meat plant at Geneseo, IL. Dan boasts over 200 state
and national championships with his meat products. Dan was proud and humbled
by his induction.
It all started when his
great-grandfather came from Switzerland in 1905. Dan's grandfather, father, and uncles all worked in the
meat business. As a youngster, Dan began helping out his dad and uncles. Later in life he and his
brother Craig opened their own meat market in Geneseo, Illinois. In 1995, after his brother's untimely
death, Dan and wife Tracy hired Dan's cousin to work with them in Geneseo. Today the family business
thrives with Dan's four daughters helping out from time to time.
Using many product recipes that have been handed down through generations, Dan has
produced numerous quality cured meat products. He has also experimented on his own and has been
very successful with a product he calls "Ham for Two".
Dan has been active in the Illinois Association of Meat Processors (IAMP) and most recently served as President in 2006. He was instrumental in moving their state convention back to Champaign so that the convention could include hands-on programs at the University of Illinois. Weber Meats of Geneseo has competed in both state and national cured meat competition. In state competition they have received over 140 awards including the 2007 Innovative Beef Award. Weber Meats has also been competitive in AAMP cured meats competition garnering numerous Champion, Reserve Grand Champion and Grand Champion awards for sausage and ham products.
